Banana Cake

Ingredients

  • 1 cup Lupin Flour
  • ¾ cup self raising flour
  • ¼ cup wholemeal self raising flour
  • 1 level tsp bi-carb soda
  • ¾ cup milk
  • 2 large or 3 small bananas mashed
  • 125g butter
  • 1 cup castor sugar
  • 2 eggs
  • 1 tsp vanilla
  • ¼ tsp salt

Method

Dissolve bi-carb soda in milk and mash bananas. Cream butter and sugar until light and creamy, add all the other ingredients and beat on low until well combined. Bake in lightly greased ring tin or loaf tin for 45-50 minutes in moderate oven 180°C. When cool ice with lemon icing or leave plain.
