Carrot Cake

Ingredients

  • ¼ cup Lupin Flour
  • ¾ cup wholemeal flour
  • 2 cups grated carrot
  • 2 eggs
  • ¾ tsp cream of tartar
  • ¾ tsp bi-carbonate of soda
  • ¼ cup chopped walnuts
  • ½ cup oil (not olive oil)
  • ½ cup castor sugar
  • 1 tsp cinnamon

Method

Beat eggs and sugar, add oil then grated carrot and chopped walnut. Mix in sifted flours, bi-carbonate of soda, tartar and cinnamon. Put in greased tin and bake for 40 minutes at 175°C or until cooked.
