Carrot Cake
Ingredients
- ¼ cup Lupin Flour
- ¾ cup wholemeal flour

2 cups grated carrot

2 eggs

¾ tsp cream of tartar

¾ tsp bi-carbonate of soda

¼ cup chopped walnuts

½ cup oil (not olive oil)

½ cup castor sugar

1 tsp cinnamon
Method
Beat eggs and sugar, add oil then grated carrot and chopped walnut.
Mix in sifted flours, bi-carbonate of soda, tartar and cinnamon.
Put in greased tin and bake for 40 minutes at 175°C or until cooked.
