Carrot Cake
Ingredients
- 1½ cups lupin flour

1½ cups finely grated carrot

½ cup chopped pecan nuts

2 eggs

1 cup brown sugar
-
¾ cup olive oil

½ tsp vanilla essence

¾ tsp powdered ginger

Pinch of salt
Icing
- 45g butter
-
90g cream cheese
-
1 lime – grated rind and ½ lime juice
- 2 cups icing sugar
Method
Put all ingredients into mixer and beat until well combined,
Place in large prepared round cake tin.
Bake at 165°C for 50 minutes or so, checking every so often.
Pace on cake rack to cool before icing.
Icing -
Beat butter and cream cheese together, then add rind of lime, juice of lime and icing sugar and beat well until smooth.
Garnish as you see fit.
