Carrot Cake

Ingredients

  • 1½ cups lupin flour
  • 1½ cups finely grated carrot
  • ½ cup chopped pecan nuts
  • 2 eggs
  • 1 cup brown sugar
  • ¾ cup olive oil
  • ½ tsp vanilla essence
  • ¾ tsp powdered ginger
  • Pinch of salt

Icing

  • 45g butter
  • 90g cream cheese
  • 1 lime – grated rind and ½ lime juice
  • 2 cups icing sugar

 

Method

Put all ingredients into mixer and beat until well combined, Place in large prepared round cake tin. Bake at 165°C for 50 minutes or so, checking every so often. Pace on cake rack to cool before icing.

Icing - Beat butter and cream cheese together, then add rind of lime, juice of lime and icing sugar and beat well until smooth. Garnish as you see fit.
