Currant Carrot Cookies
Ingredients
- 1 cup Lupin flour

1 cup white flour

1 tsp cream of tartar

½ tsp bi-carbonate soda

1 egg

½ cup brown sugar

½ cup chopped walnuts

1 tsp vanilla

2 cups grated carrot

250g butter
-
1 cup currants
-
1 tbsp coconut
Method
Cream butter and sugar together, add egg and beat well, stir in all other ingredients.
Place a teaspoons of mixture onto a greased tray and cook for 15-20 minutes or until cooked at 150°C.
