Vegemite and Curry Scones
Ingredients
- 1¾ cups Lupin Flour

2 tbs sugar

1 tbs vegemite

1½ tsp curry

2 tbs boiling water

2 eggs

200ml cream (longlife)

2/3 cup milk

2 tsp baking powder

2¾ cups self raising flour
Method
Dissolve vegemite and curry in hot water and allow to cool.
Beat eggs until light and frothy; add milk, cream and vegemite/curry mix.
Lightly mix in flours and baking powder – don’t over mix.
Pat out to 2cm thick and cut into scones with biscuit cutter.
Place close together on baking tray. This helps them rise and keep their shape.
Bake in hot oven 10-12 minutes
Makes approximately 2 dozen scones
Variation – sprinkle cheese on top or mix into mixture or vary vegemite and curry to personal tastes.
